2 tablespoons pure maple syrup
1/2 teaspoon vanilla extract
1/2 cup fresh or frozen raspberries (plus more for garnish)

Instructions
Start by preparing your ingredients: measure 1/4 cup chia seeds and 1 cup almond milk. Make sure the almond milk is unsweetened.
Add the chia seeds and almond milk to a medium-sized bowl or a mason jar. Stir the mixture thoroughly to ensure the chia seeds are evenly distributed in the liquid.
Add 2 tablespoons of maple syrup and 1/2 teaspoon of vanilla extract. Stir again until everything is well combined. You should have a uniform mixture.
Cover the bowl or jar with plastic wrap or a lid and let the mixture rest in the refrigerator for at least 2 hours, ideally overnight, so the chia seeds can swell properly.
After the resting time, the pudding should have a thick, gel-like consistency. Stir the pudding well before serving to loosen the texture.
Serve the pudding in bowls and garnish as desired with fresh raspberries, sliced almonds, or shredded coconut. An extra drizzle of maple syrup makes it even sweeter!
